Friday when I dropped my chum off at preschool, I picked up a half dozen eggs from another mom who keeps chickens. Making an omelet with mushrooms from the farmers' market makes me feel like an article from the British Country Living mag! If only I'd worn boots!

What gorgeous looking eggs. Nothing beats an omelette or poached egg from your own chickens. You can see the difference just in the rich orange yolks. The downside is the mucking out, especially if you keep ducks too ... somehow the kids are less keen on that part of the animal husbandry. Goose eggs are superb if you can get them, ours are not the most prolific layers but I reckon as I do most of the mucking out I get first dibs on the goose eggs!
